To the beautiful Naranjo waterfalls or you can rent ATVs.
Copey, a lovely village well know for trout fishing in artificial lakes (you can have your trout cooked in a country restaurant).
Hot springs and a canopy in San Carlos at about an hour and a half from Santa María de Dota, not very elaborated but in the real nature.
Los Santos Natural Reserve is beautiful, walking there is enjoyable in any place. You will also have the opportunity to watch a great variety of birds.
The coffee processing plant which is at full work from December to February or March. You'll be able to watch how the coffee is produced, collected, washed, roasted, and…you'll be able to taste it!.

Bird watching:
In a private reserve you'll find quetzals, woodpeckers, hummingbirds, flycatchers, momots, hawks, and lots of other birds. Some of these can also be seen from the terrace of the main villa.
